Garlic Chicken Quinoa

Have you ever had Quinoa? It is a super healthy grain/seed. It is very high in protein, a good source of magnesium, folate and phosphorus.

The best part is that my kids like it! Sure Little Em picks out all the bell peppers, but she likes the quinoa, which is fine with me.

This is one of my favorite ways to prepare it.

Doesn't it just look delicious?

Ingredients:

1 cup Quinoa
2 Cups Chicken broth
2 Boneless Chicken Breasts (cut up to bite sized pieces)
1/2 Cup of chopped red onion
1 red bell pepper (seeded and diced)
1 green bell pepper (seeded and diced)
5 garlic gloves (minced)
Basil (about 6 large leaves Julienned)
Olive Oil
Gratted parmesan cheese
salt and pepper to taste

Prepare Quinoa to package instructions (instead of water use the chicken broth)




Heat large nonstick skillet over high heat and add oil. Add the chicken and saute for 5-7 minutes or until golden brown. Add onions, bell peppers, and saute for one or two minute. Add garlic and saute until pepper become slightly limp but still bright. Season with salt and pepper.



Add in the quinoa and stir in.


Then toss in the basil. Garnish with parmesan cheese when serving.
